Purification of Oligosaccharides from Soybean Using Activated Charcoal

Abstract
Oligosaccharides were extracted from dehulled soybean using boiling water. Sugar solubilization occurred rapidly for the first 3 min to 35% extraction of the total sugar, after which extraction occurred at slower rate. At the extraction time of 10min, 45% was solubilized with the sugar composition of the whey being 0.038% glucose, 0.84% sucrose, 0.11% raffinose and 0.50% stachyose. Activated charcoal was used for purification process. Most of the sugar components adsorbed on the activated charcoal within 90 sec. Desorption of sugar occurred when 50% ethanol was used as the eluent. Using the process, impurities such as pigments and protein were removed and pure sugar solution of more than 98% purity was obtained.
